I love Martha Stewart. Prison or no prison, I spent much of my twenties watching every episode of her show. There are a few tidbits from different shows that never left me. One of them is about cookies. I learned that the beginning of the cookie process really sets the standard for what your cookie will be in the end. Specifically, the part where you cream the butter, sugar, and eggs together. Before I saw this episode, I turned the mixer off once the ingredients looked mixed together. That is WRONG.
The creaming part of mixing is where you get your fluffy air into your dough. So don’t stop when it looks mixed together! Keep that mixer on for an extra two or three minutes. Let it get fluffy and beautiful before you add your flour. I actually make it a habit to step away from the mixer during the creaming part so I am not tempted to stop it too early. The mixture should almost look like frosting.
S’More Cookies Easy Party Tip
I love making cookies for parties because they are easy to transport. It is also easy to make a lot of servings with one batch of dough. I served my cookies in a throwaway bread pan. They stacked well, didn’t take up too much room on the goodie table, and I didn’t have to worry about bringing home a dish.
S'More Cookies are a yummy twist on a classic.
- 2 Eggs
- 1/2 Cup Butter I use vegan
- 1/2 Cup Shortening
- 1 Cup Granulated Sugar
- 1 Cup Brown Sugar packed
- 1 Tbsp Vanilla
- 2 1/2 Cups Flour
- 1 1/2 Tsp Baking Soda
- 1 Cup Mini Chocolate Chips I use Dairy Free
- 1 1/2 Cup Mini Marshmallows
- 1 1/2 Cup Graham Crackers broken into pieces (approx 4 crackers)
Preheat oven to 375 degrees. Cream Butter, Shortening, Sugar, Eggs and Vanilla. Cream until light and fluffy. Mix Flour and Baking Soda together in a separate bowl. Add dry ingredients to creamed ingredients 1/2 cup at a time until all is combined. Mix by hand (not mixer) Chocolate Chips, Marshmallows, and Graham Cracker Pieces. Drop 1 tbsp sized cookie dough balls onto greased cookie sheet. Bake for 8 to 10 minutes. Allow to cool for 5 minutes on pan before transferring to cooling rack.
