My Black Bean Taco Skillet Meal was so popular, that I was inspired to create another quick, one-skillet-meal. This time I chose another one of our family favorites….PIZZA! Pizza is a complicated food for our family. We love it, but our food allergies knock out traditional pizza. My son has an allergy to yeast. My daughter has an allergy to dairy. We have discovered yeast free crusts and dairy free cheese, so we usually just make homemade pizza. Like most kids, they would like to have pizza every week, but it takes planning to keep all of the ingredients. Since I usually have all the ingredients on hand for this pizza skillet it’s an easy win at our house.
Because of our food allergies, I stopped buying boxed/frozen skillet meals. I used to think that they were a real deal and faster than making the same dish homemade. The price tag makes it look like a deal but, when you start to factor in servings and portion sizes, they really are not. You are paying a lot of money for a few noodles and spices. It is cheaper to make it from scratch, and it really only takes about 5 minutes longer.
ONE MINUTE KITCHEN HACK
Stock up on meat when it goes on sale. Most products have a 6 week cycle between sales. Stocking up on ground meat and chicken not only can help your budget but makes it easier to cook quick meals. I always keep ground meat on hand. I use beef, turkey, chicken, and pork interchangeably. Pork is my favorite; because, it is usually significantly cheaper.
Skillet Pizza is a one pot pasta dish.
- 1 lb Ground Meat
- 1 Onion chopped
- 1 Bell Pepper chopped
- 1 tbsp Garlic Powder
- 1 tbsp Basil
- 1 tbsp Oregano
- 1 tbsp Rosemary
- 2 tsp Basil
- Salt and Pepper to taste
- 2 cup Pasta dry (gluten free or traditional)
- 2 cup Broth (chicken, beef or veggie)
- 2 cup Tomato Sauce
- 3 oz Pepperoni chopped
- Cheese for serving vegan cheese or dairy mozzarella
Brown ground meat and drain fat when completely cooked. Add chopped onion and bell pepper to meat and sauté for 3 minutes. Mix in tomato sauce, broth, garlic powder, basil, oregano, rosemary, basil, and salt/pepper. Bring mixture to a boil. Add uncooked pasta and pepperoni mix well and cover. Cook for 10 minutes (gluten free pastor 15 minutes (traditional pasta). If pasta is not tender cook for a couple more minutes.
Top individual servings with cheese.
