I really didn’t fall in love with/respect Julia Child until I saw the movie Julie and Julia. It’s funny because I, by chance, saw the movie on a free HBO weekend. It was close to Christmas, and I started looking for Mastering the Art of French Cooking at local libraries but couldn’t find it. Christmas morning my husband had Julie and Julia-themed surprises for me: Mastering the Art of French Cooking, a dutch oven, a pearl necklace, and the book Julie and Julia.
I read Mastering the Art of French Cooking like a novel. It’s amazing. If you just look at the recipes you miss so much. She really tells you EVERYTHING you need for basic cooking. Before I owned the book, I made the mistake of thinking Julia Child was all about “fancy” cooking. While she has recipes for beautiful unique foods, most of her recipes are for everyday meals. And the beautiful thing about French cooking is that it is all about real food.

SIMPLE HACKS FROM JULIA CHILD
DRY YOUR MEAT
Take paper towels and dry all of your meat before browning. “It will not properly brown if damp”! pg 316 This makes a HUGE difference in browning meat and will make your final dish much more flavorful.
“Mushrooms must be dry, the butter very hot, and the mushrooms must not be crowded in the pan. If you saute too many at once they will steam.” Pg 513 Psst, I had know idea that I had been “steaming” my mushrooms, but I have changed my ways. There is a difference!
AN EXCELLENT LUNCH
“Good soup, a salad, cheese and fruit” pg 37. Her soup recipes are so basic and better than any can or restaurant! Make soup on Sunday night and you will have a tasty lunch for several days. You could even prep the salad, cheese and fruit. Planning keeps you on a healthy track!
