I strongly suggest using tostadas not corn tortillas in this recipe. Once baked the tostadas do soften, but they hold together well even the next day without getting soggy. What do you do with leftover tostadas? You can make tostadas (of course) or mini Mexican pizzas for lunch.
An Easy Fun Recipe Mexican Pizza Skillet.
- 12 to 14 Tostadas
- 1 lb Ground Meat
- 1 tbsp Mexican Seasoning
- 1 16 oz can Refried Beans
- 2 cups Salsa
- 2 oz Shredded Cheese Cheddar or Daiya Vegan
- Top with any or all of the following – Tomato Cilantro, Salad, Olives, Green Onions, Guacamole, or Sour Cream.
Preheat oven to 350. Cook 1 lb of ground meat and season with Mexican Seasoning. Drain. In an oven safe skillet layer 6 Tostadas (overlapping). I used a 12-inch skillet. Spread half of the refried beans on Tostadas. If the beans are difficult to spread soften for 30 seconds to 1 minute by heating in the microwave. Add all of the taco meat for the next layer. Add one cup of salsa. Cover layers with 6 Tostadas covered with remaining refried beans. Add remaining salsa. Cover in cheese and bake for 25 minutes.
Serve with diced tomato, cilantro, salad, olives, green onions, guacamole, or sour cream
