Fancy Slow Cooker Chicken is one of my most unique recipes. Chicken can get soooo boring. And, if your family is like mine, you eat a lot of chicken. Sometimes it just all starts tasting the same. This recipe is unique because you are cooking an entire chicken in coconut milk and cinnamon sticks. What? I know! I promise the flavors come together perfectly. And, yes even my kids ate it. Easy crockpot meals do not mean that dinner has to be boring. Mix things up with this easy crockpot recipe with unique ingredients and an AMAZING taste!
One thing that makes this chicken recipe so yummy, is that you brown the whole chicken before you put in the slow cooker. I know it’s a pain, but this is a key to a wonderfully flavored chicken. This step only takes about 10 minutes. If you hate dirtying a separate pan for browning your meat before putting it into your slow cooker, you should check out the instant pot. You can brown your meat and cook your meal all in the same pan!
Easy Crockpot Recipe
It’s time to put the bird into the slow cooker. Add the spices, lemon, and coconut and let your crockpot work its magic.

Fancy Slow Cooker Chicken
- Whole Chicken
- Lemon Zest of 1 lemon
- 1 Can of Coconut Whole Milk not refrigerated
- 1 tbsp Crushed Thyme
- 4 Cloves crushed Garlic
- 2 Cinnamon Sticks
- Olive Oil
- Salt and Pepper
Heat olive oil in a pan, large enough to fit the whole chicken, on the stove. Salt and Pepper chicken and then brown on all sides. Once browned transfer to a slow cooker. Add coconut milk, cinnamon sticks, and garlic cloves. On top of the chicken evenly spread crushed thyme and lemon zest. Cook on high for 4 hours.

You cooked your chicken now make it into a meal.

- Serve with quinoa or rice
- Serve with oven roasted veggies or steamed veggies
