Cheesy Chicken Enchilada Skillet is an easy one pot pasta dish.
- 4 cups Chicken shredded (either left over chicken or rotisserie)
- 29 oz Tomato Puree
- 3 cups Chicken Broth
- 1/4 cup Flour or arrowroot powder
- 2 tsp Cumin
- 1 tsp Onion Powder
- 3 tsp Garlic Powder
- 1/4 tsp Chili Powder
- 1/4 tsp Red Pepper Flakes
- 1 tsp Minced Onion
- 1 cup Shredded Cheese I use Daiya Vegan Cheese
- 2 cups Dry Pasta I used bow ties
Over medium low heat add Shredded Chicken, Tomato Puree, and Chicken Broth. Stir in Flour, Cumin, Onion Powder, Garlic Powder, Chili Powder, Red Pepper Flakes, and Minced Onion bring to a boil and let simmer for 5 minutes stirring often. Stir in Shredded Cheese. Stir until cheese is completely melted. Bring to a boil over Medium Low to Medium heat and add pasta. Cover and cook 12 to 15 minutes (10 to 12 for gluten free pasta stirring occasionally).
