Need a good quick meal idea? Mexican night at our house is a big happy food night. It is the one night that I can guarantee that everyone will be happy with supper. It doesn’t matter what Mexican style dish that I a making, the family cheerfully arrives at the dinner table ready to eat. And, at this stage of kid life, that is a huge accomplishment. By the end of the day, I am just ready for the kids to sit and eat with pleasant attitudes. Isn’t every mother’s supper wish?! Wish granted, these Bean and Cheese Tacos keep them chowing without any parental prodding.
Is it super hot this summer where you live? In Alabama, it has been heat-advisory-hot now everyday for a couple of weeks. I love summer! But, this summer it is almost too hot to go outside. I am so ready for highs in the eighties, so we can enjoy leaving the house. It has been so hot that I have not cooked involved meals this summer. I have focused on quick meals; because, it is just too miserable for anything else. Yes, even with the air conditioning it is still warm in the house in the afternoons and super humid. These Bean and Cheese Tacos are ready in 20 minutes which is perfect for a busy night or a day that is just too hot to hang out in the kitchen.
Good Quick Meal Weeknight Idea
Bean and Cheese Tacos are also perfect frugal, quick and easy recipe for Meatless Mondays or Taco Tuesdays.
Bean and Cheese Tacos are a good quick meal.
- 1 can Black Beans rinsed and drained
- 1 can Red Beans rinsed and drained
- 8 ounces Shredded Cheese (we use vegan cheese)
- 1 can Rotel
- 2 tbsp Minced Onion
- 1 tbsp Taco Seasoning
- 1/2 tsp Salt
- 1 package Taco Shells or Tortillas
- Taco Toppings: Tomato Lettuce, Sour Cream, Salsa, Guacamole
Preheat Oven to 350 degrees.
In an oven safe dish, mix Black Beans, Red Beans, Cheese, Rotel, Minced Onion, Taco Seasoning, and Salt.
Bake for 20 minutes uncovered in the oven.
Remove from oven and stir bean and cheese mixture until cheese is completely combined. If using vegan cheese, you will have to stir longer. It will combine but takes a few more minutes of stirring.
Serve in Taco Shells and top with favorite toppings.
