And, I found out that most people are in the same situation. As a family, you are on the go. You need easy family friendly meals. We really want to eat home cook meals but sometimes it is just hard. There are days when I have extra time to cook, but a lot of days I need a meal on the table quick. This Bacon Cheeseburger Skillet is the first of many recipes that I creating to help on those “on the go” days. There will be slow cooker recipes, easy breakfasts, lunch ideas, and skillets. Bacon Cheeseburger skillet is an easy to cook family friendly meal, and my family of four had some leftovers. Don’t you just love leftovers?! Even if it is just enough for one person to have lunch the next day, leftovers are awesome. And this skillet tastes amazing the next day. The lovely bacon flavor infuses the whole dish. This skillet would even be awesome to make the day before, so all you had to do is just warm it up for a super busy day.

Bacon Cheeseburger Skillet is a quick and easy dinner solution.
- 1 lb Ground Meat I used beef
- 1 Onion diced
- 5 oz Bacon chopped (I use kitchen scissors to cut into pieces)
- 1 can Diced Tomato
- 4 cups Fresh Spinach
- 1 tbsp Dijon Mustard
- 2 tsp Garlic Powder
- 2 tsp Onion Powder
- Salt and Pepper to taste
- 8 oz Cream Cheese cubed (I use dairy free)
- 1 cup Chicken Broth
- 1 cup Milk I used Coconut
- 2 cups Dry Pasta
- 2 cups Shredded Cheese I use Vegan
Heat a skillet over medium heat. Add Bacon and cook for 3 minutes. Once fat starts rendering from Bacon add Onion and continue cooking for 2 minutes. Add Ground Meat and cook until no pink is left. Drain fat from Bacon, Onion, and Meat Mixture. Add mixture back to skillet stir in Dijon Mustard, Garlic Powder, Onion Powder, Salt, Pepper, Diced Tomato, and Spinach. Cook for 1 minute and add Cream Cheese. Stirring consistently add Broth and Milk. Bring to a boil and add Pasta. Cover and cook stirring occasionally for 12 to 15 minutes or until pasta is tender. Take skillet off of heat and mix in cheese.
